Homemade Nutty Granola.

I always find what I eat for breakfast can have such an impact on my mental wellbeing and how my day pans out. On the days where I feel like something sweet I turn to this recipe. Pair it with some greek yogurt and top with chia seeds, walnuts, some cut up fruit and a drizzle of honey and you have yourself a bowl of delicious goodness! Keep the granola in an air tight container and it will keep well for several weeks.


Ingredients (you can mix them up / add more or less depending on what you prefer) :


- 300g jumbo oats

- 50g sunflower oil

- 100g unroasted buckwheat groats

- 4 tablespoons of maple syrup

- 40g sunflower seeds

- 40g pumpkin seeds

- handful of almonds

- handful of cashews

- 4 teaspoons of cinnamon

- 100g raisins


Method :


1) Preheat the oven to 180 degrees C fan.


2) Roast the buckwheat groats on a lined baking tray, in the oven for 35 mins or until golden. Leave tray to cool once roasted.


3) In a bowl, stir the oats, maple syrup, sunflower oil, cinnamon, sunflower and pumpkin seeds, almonds and the cashews.


4) Spread the mixture on a lined baking tray, and bake for 35-40 minutes, stirring every 10 minutes or so.


5) Leave to cool. Once at room temperature, mix through the raisins and the buckwheat groats.


6) Store in air tight container and enjoy as a delicious brekky!
